pinch of salt

i LOVE to cook. but i'm recently coming to terms with the lack of enjoyment cooking for just myself brings. it saddens me. when i have someone else to cook for (most preferably a non-picky eater) i like to go a little nuts in the kitchen. as much as i like the results of baking, i prefer the freedom cooking brings. with baking you HAVE to follow the recipe, because baking is more of a science where the right amounts of each ingredient come together to make the perfect delicious goodness. cooking, though, is no-holds barred do whatever you want. sometimes this plan back-fires and results in a disgusting in-edible concoction...resulting in a trip to mickey dee's. but other times, my master-mixing skills result in delectable awesomeness. yeah - pretty much, i ROCK!

i recently adapted a recipe for enchilada pie.
(don't worry, it isn't really "pie")
i made a vegetarian version, but you could easily add some chicken or beef.

Enchilada Pie:
layers of tortilla, refried beans, corn mixed with salsa, rice/sour cream/enchilada sauce mixture, and cheese.
bake for 30 minutes at 350 degrees. Yummy!

mix 1.5 cups of uncooked rice with 1/2 cup enchilada sauce, and 1/4 cup sour cream (i don't measure, but you can). also mix 1/4 to 1/2 cup of salsa with frozen or canned corn. you can leave the refried beans out
or use black beans. any questions?

Anytime you want to make dinner for two, I'm there :) I've talked to others about doing more dinners, cause it is nice to try out recipes for more than just one person. Dinner parties...does that make us old?
