being the hungry girl that I am (hey, hungry girl would have been a good blog name), I often find myself scoping out food sites and recipes. a few of my everyday faves: yahoo food, real simple, and Kraft. (yes, I check them out pretty much daily.) I like these sites because they provide recipe options for things that I can actually make without going to the grocery store. Ahhhh! A week-night must for this on-the-run girl.
Yesterday I happened past a very yummy looking and easy recipe. I already needed a few staples from the grocery store, so I opted to pick up what the recipe called for (yeah, I don't normally have chicken or pork in the freezer, nor pineapple, or red peppers...weird huh?).
I was very impressed with the ease, colorfulness, and absolute deliciousness of this meal! Plus, it was super quick! I opted for chicken instead of pork and adjusted the recipe some (ending up with 3 meals worth). I used water instead of broth and next time I think I would add some onions with the peppers, maybe cherries too. Honestly delicious food...and, pretty good for you (I opted for light french dressing).
2 tsp. oil
4 bone-in pork chops (1-1/2 lb.)
1 medium each: red and yellow pepper, cut into chunks
2 cans (8 oz. each) pineapple chunks in juice, undrained
1/2 cup fat-free reduced-sodium chicken broth
1/4 cup KRAFT CATALINA Dressing
1-1/2 tsp. garlic powder
1-1/2 cups instant white rice, uncooked
HEAT oil in large nonstick skillet on medium-high heat. Add chops; cook 5 min. on each side or until browned on both sides.
ADD peppers, pineapple, broth, dressing and garlic powder; mix well. Bring to boil.
STIR in rice; cover. Reduce heat to medium-low; simmer 5 min. or until chops are cooked through (160°F). Remove from heat; let stand 5 min.
